Our Beginning
Established in 2022, NōKA Ramen & Bar is proud to call Jack London Square in Oakland, CA our home. Located at 90 Franklin St, we set out to bring authentic Japanese ramen to the Bay Area. Our goal has always been to create more than a meal — we want guests to enjoy an experience.
The Inspiration
We were inspired by the rich flavors of Hakata-style tonkotsu ramen. The creamy pork broth, paired with our homemade artisan noodles, is crafted using traditional Japanese techniques. From the start, we wanted to share this unique style of ramen with our community. Our noodles are made in-house every day. They are smooth, firm, and have a gentle bounce. We also serve chashu pork belly, braised in soy sauce, mirin, and aromatics until tender.
